Diablo’s was established back in 2008 by Alex Luck from an original passion for great tasting, no fuss, British cuisine and the need for an informal dining experience. The brand has grown to 3 sites across South Wales (Carmarthen & Swansea) and offers live music every weekend at 2 of the sites (SA1 & Nott Square) .
Alex Luck – Founder of Diablo’s
Alex’s career in the food industry started back at the ripe old age of just 18 years old, where he owned a baguette shop for 5 years. This ignited Alex’s passion for the food industry, taking him onto cheffing roles, one of which was at a fine dining restaurant in Carmarthen ‘The Angel’s Vault’. Whilst in this role, Alex identified a gap in the market for a less formal dining experience in Carmarthen and set out to create a contrasting restaurant. And of course, the contrast was also reflected in the name, Diablo’s.
Diablo’s was born! The first site, was Diablo’s Nott Square (St. Mary’s street). Offering an informal dining experience and introducing the concept of Small Plate dining to the West Wales community. Since 2008 Nott Square, alongside it’s food offering, has developed an extensive cocktail and drinks menu (particularly popular for its indulgent cocktails, perfectly prepared by the experienced team) and growing from monthly live music gigs to now offering live music every Friday and Saturday night, turning Nott Square into Carmarthen’s night life destination – the place to be!
Due to the success of Nott Square, the growth of Diablo’s began with the opening of a restaurant in Narberth, Pembrokeshire.
Further growth of the Diablo’s brand brought Alex back to Carmarthen with the opening of Diablo’s On The Quay, a gastro pub, another informal dining experience. Overtime the site has adapted and developed to accommodate the needs of the customers, perfecting the menu to keep customers coming back time and again. Sourcing of products is the main strength of On The Quay, particularly the steaks, Hereford’s finest beef that has been dry aged for a minimum of 35 days and of course, cooked to perfection by our in-house trained team of talented chefs. And not forgetting the Rolled Belly Pork as quoted as one of Wales Online’s ‘The best things you can possibly eat right now in Wales‘ in 2017
Although this was the year that the Narberth site closed, this was to allow for the team to focus on the acquisition of a site further down the M4 in Swansea.
2017 brings us to the latest addition to the Diablo’s brand – the Swansea SA1 site. The perfect compliment to the existing 2 Diablo’s sites. Based on the outskirts of the town centre, and a few minutes walk from the popular night life of Wind Street. Diablo’s SA1 introduces the concept of Small Plates to Swansea in a stylish informal dining environment with the aim to be the best live music site in Swansea.
